We have since 2017 a dryer and a "natural" ripening room, no control by machines, just windows and doors to open and close.
We are an SME (4 sisters) and we manufacture Ardennes specialities. We manufacture as naturally as possible, naturally dry. No addition of ferments, no nitrite in salts (sausages, ham,...) no lactose.
